This recipe takes vegetables to a whole new level! Glazed, seasoned and topped with fresh parsley.

Serves 4-6
2 Tbl oil
1 red onion, large dice
1 red pepper, large dice
1 sweet potato, peeled and cut in chunks
1 large carrot, peeled and cut in chunks
8 oz whole mushrooms
1 c dark beer 
1 tsp Proper Good Spicy Seasoning
1 Tbl Cajun Seasoning
Salt and Pepper, to taste
2 sprigs fresh parsley, chopped
1. Preheat the oven at 400 degrees. 
2. Combine all ingredients in a large baking pan.
3. Cover with foil and bake for 35 minutes, or until vegetables are tender.
4. Top with fresh chopped parsley.
