Serves: 2 Salads
For the Dressing
3 Tbsp - Tahini
2 Tbsp - Lemon Juice
2 Tbsp - Water
1/4 Tbsp - Olive Oil
1 - Small Clove Garlic (minced)
1/4 tsp - Ground Cumin
1/4 tsp - Salt
For the Greens
1 large bunch - Kale (stems/tough ribs removed and cut as fine as possible)
To Taste - Lemon Zest
In a small bowl whisk together Tahini, Lemon Juice, Olive Oil, Water, Salt, Garlic and Cumin until smooth.
Combine Kale and Lemon Zest in a large bowl.
Add dressing and combine thoroughly.
Plate salad and dress with extra Lemon Zest.
