Serves: 4 side salads
1 ½ Cups Arugula
1 ½ Cups Sweet Pea Leaves
1 Cup Baby Spinach
1 Cup Mint Leaves
1 Apple (Pink Lady Apple Recommended)
¼ Cup Pumpkin Seeds
2 Tablespoons Olive Oil
1 ½ Tablespoon Freshly Squeezed Lime Juice Pinch of Salt To Make Your Salad...
Mix the Olive Oil and Lime Juice together in a large bowl.
Add all the Arugula, Sweet Pea Leaves, Baby Spinach and Mint Leaves.
Toss in the bowl, to coat all leaves in the Olive Oil and Lime Juice.
Core the Apple, cut into thin segments and add to bowl.
Add Pumpkin Seeds to your bowl Lightly toss all ingredients together and add Salt to taste.
