RED PEPPER RATATOUILLE - Eat Proper Good

Cook Time: 45 minutes
Total Time: 55 minutes
Serves 4-6
Ingredients
1 red onion, sliced
2 small zucchini, sliced
1 small eggplant, sliced
3 tomatoes, sliced
2 Tbs olive oil
2 Tbs fresh dill, chopped
2 Tbs fresh parsley, chopped
Salt and pepper, to taste
Method
1. Preheat oven to 375 degrees. Pour blended Proper Good Red Pepper and Meatball Soup into a large casserole dish.
2. Layer with sliced vegetables, one of each type to make a pattern. Top with olive oil, fresh herbs and salt and pepper.
3. Bake for 45 minutes, until golden brown and bubbly.
