Love date and nut balls? Then you will love this spooky twist on a classic! Naturally sweet from date sugar these are a true treat, and with a touch of chocolate from cocoa powder and a juicy raspberry that doubles as a spooky red iris! Scarily tasty and easy to make!
Serves: 8 spooky eyeballs
Time: 30 minutes
Ingredients
2 cups pitted dates
1 cup desiccated coconut
½ cup raw pecans
½ cup raw macadamia nuts
2 tablespoons cocoa powder
2 tablespoons almond butter
1 tablespoons oat milk
½ teaspoon salt
8 x raspberries - for one per eyeball, but have extras on hand in case any break.
Method
Combine the pecans and macadamia nuts in a food processor and chop into fine pieces.
Add the pitted dates and process until the mixture has a grainy consistency.
Add the cocoa powder, salt, almond butter and oat milk.
Combine in food processor until thoroughly mixed and makes a smooth paste.
Divide the mixture into 8 equal parts, or less depending on how big you want your eyeballs to be. They need to be big enough to easily fit a raspberry inside.
Roll each part of your mixture into equal sized balls.
Pour your desiccated coconut into a bowl and roll each ball around the bowl, covering them entirely in coconut.
Remove part of the center of each ball, enough to fit a raspberry inside, we find the easiest way to do this is with an icing bag nozzle but feel free to remove it in whatever way you feel is easiest.
Save the bit of date mixture that you removed.
Place a raspberry in the hole you've created. Place the raspberry with the top into the center of the date ball, so that the raspberry end with the opening is facing outwards.
Roll up a little bit of the date mixture you removed from the center, roll it up, and place inside the hole in the raspberry, to make a pupil.
From doing all of this, some of the coconut may have been displaced, if so, simply dab a little bit of water on your finger, dab it onto the date ball and reapply little bits of coconut.
Your spooky date eyeballs are now ready to enjoy!
