Vegan Peanut Curry with Mushrooms and Chickpeas

Our vegan twist on a traditional Indian favorite!

Cook Time: 20 minutes
Total Time: 30 minutes
Serves 4-6
1/2 onion, diced
3 cloves garlic, minced
1 red pepper, diced
3 roma tomatoes, diced
1 sweet potato, peeled and diced
8 oz mushrooms, halved
1 can chickpeas, drained and rinsed
1 pouch Mushroom Broth
1/2 c peanut butter
1 Tbl yellow curry powder
1/2 c dry roasted peanuts
Salt and pepper, to taste
1. Combine all ingredients in a large pot over medium heat. Cover with lid.
2. Bring to a boil and allow to simmer for 20 minutes, or until vegetables are softened.
3. Serve over Proper Good Brown Rice and Quinoa. Yum!
