Vegan Mushroom Burrito

Sautéed vegetables and protein packed grains rolled up into a warm tortilla!

Total Time: 15 minutes
Serves 2-4
1 pouch Proper Good Quinoa Brown Rice Blend
2 Tbl olive oil
1/2 c mushrooms, diced
1/4 c onions, diced
1/4 c red pepper, diced
1 avocado, sliced
2-4 tortilla wraps
1. In a large saucepan over medium heat, add oil, mushrooms, onions and peppers. 
2. Saute until softened, about 5 minutes.
3. Pour 1 pouch of Proper Good Quinoa Brown Rice Blend into the pan and combine well.
4. Layer filling on warm tortilla wraps and top with avocado. Roll and enjoy.
