Ingredients:
1 small Red Onion, chopped
1 Red Bell Pepper, chopped
1 Green Bell Pepper, chopped
2 cups Butternut Squash, frozen and cubed
12 baby Red Potatoes, cut into bite-sized pieces
4 Veggie Sausages, cut into 1/2" coins
2 tbsp. Olive Oil
2 Zucchini, chopped
1-2 tbsp. Proper Good Spicy Seasoning
1/2 tsp. Salt
Fresh Parsley, chopped, for serving
Instructions:
1. In a large bowl, toss together all ingredients until well-combined.
2. Cut 8 rectangular sheets of heavy-duty aluminum, placing two sheets on top of each other, then fold up the edges to create a bowl-like shape.
3. Divide the sausage and vegetable mixture among the foil packets, then seal the edges together.
4. Grill or toss in the campfire to cook until warm and fully cooked, about 15-20 minutes. Enjoy warm with fresh parsley for garnishing!
