(Vegan) Coconut & Blueberry French Toast

If you're craving some fluffy, sweet french toast then you're in luck! This recipe is not only vegan-friendly, but super easy to make.

Ingredients:
1 loaf of crusty French Bread, sliced into 3/4" thick slices
1 ripe Banana, mashed
1 14-oz can Coconut Milk
1/4 cup Shredded Coconut Flakes, plus more for garnishing. 
1 tbsp. Olive Oil
1 tsp. Vanilla Extract
Pinch of Salt
Fresh Blueberries, for serving
Maple Syrup, for serving
Instructions:
1. In a large container or bowl, whisk together the mashed banana, coconut milk, vanilla extract, and shredded coconut flakes. 
2. Dip each slice of bread into the batter, letting it soak for up to 30 seconds, then lifting to drip off any excess liquids. 
3. Fry it in a skillet heated up over medium-high heat with the olive oil for 2-3 minutes per side, or until crispy on the edges and golden brown. Enjoy warm with fresh blueberries and a drizzle of maple syrup!
