Ingredients
1 lb ground beef
1 lb ground italian sausage
2 eggs
1/2 cup onion, finely diced
1/4 cup bell pepper, finely diced
2 cloves garlic, finely diced
3 sprigs fresh parsley, chopped
1 tsp dried thyme
1 pouch Proper Good Chicken Bone Broth
1 head butter lettuce
1 jar keto pickled vegetables - Find recipe HERE
Method
1. In large bowl, combine ground beef, sausage, eggs, onion, pepper, garlic, parsley and thyme.
2. Form into meatballs and allow to set in the fridge for a few minutes.
3. In a large saucepan over medium heat, bring the 2 pouches of Proper Good bone broth to a boil. Add meatballs and cook until firm.
4. Serve meatballs on lettuce, topped with keto pickled vegetables.
