This light, mediterranean chicken dish lays well over our Quinoa Brown Rice Blend.

2 Tbl oil
4 boneless chicken thighs, cut in small chunks
1 zucchini, diced
1/2 red onion, diced
1/4 c yellow pepper, thinly sliced
1/4 c red pepper, thinly sliced
3 cloves garlic, minced
3 sprigs fresh parsley, chopped
2 sprigs fresh dill, chopped
1 lemon, zested and juiced
2 pouches Proper Good Quinoa Brown Rice Blend
Salt and pepper, to taste
1. In a large saucepan over medium heat, warm oil and add chicken thighs, cut in small chunks.Cook for 3-4 minutes, stirring frequently.
2. Add zucchini, red onion, red pepper and garlic and saute for another 4-5 minutes, until vegetables have softened and chicken is cooked throughout.
3. Add chopped herbs and lemon zest and juice.
4. Pour in 2 pouches Proper Good Quinoa Brown Rice Blend and salt and pepper, to taste. Combine well.
