Vegan Udon Noodle Salad - Eat Proper Good

This vegan recipe takes 15 minutes to make, and is packed with colorful veggies, Asian flavors and soft Udon Noodles. 
Cooking Info Prep Time: 10 minutes Cook Time: 5 minutes Total Time: 15 minutes Serves 4-6 Ingredients 2 cloves garlic, miced 3 Tbl rice vinegar 3 Tbl sesame oil 1 tsp grated ginger 1 tsp chili paste 1/4 c avocado oil 1 package fresh udon noodles 1/2 red pepper, thinly sliced 1/2 yellow pepper, thinly sliced 1/2 c shredded green cabbage 2 green onions, thinly sliced 1 carrot, peeled and matchstick cut 1/2 c snap peas, thinly sliced 4 oz prepared tofu, seasoned and cooked 1 tsp sesame seeds Method 1. Combine garlic, rice vinegar, sesame oil, ginger, chili paste and avocado oil in a small bowl. Set aside. 2. Bring water to a boil in a large pot. Cook udon noodles, about 4-5 minutes, or according to directions on the package. Remove from water and chill. 3. In a large bowl, combine chilled noodles with remaining ingredients. Pour prepared sauce over and stir well.
