This is one seriously hearty kale salad, with a hint of sweetness from a maple vinaigrette and savory cheese pieces that can be crafted into halloween inspired shapes like moons, witches or skulls. We love this wintery salad served with our Spiced Pumpkin Soup!

Ingredients for Salad
100g Kale (about 6 big leaves)
1/2 cup Cranberries
1/2 cup Toasted Almond Flakes
1/4 cup Pumpkin Seeds
10 cheese slices - Cheddar or Red Leicester recommended
Ingredients for Vinaigrette
1/4 cup - Olive Oil
2 tablespoons Maple Syrup
1 tablespoon Apple Cider Vinegar
Salt to taste
Chop kale into bite size pieces.
Combine chopped kale with the cranberries, almond flakes and pumpkin seeds.
Combine all ingredients for vinaigrette together, and pour over kale mix.
Fold kale mix and vinaigrette together to get an even coating.
For simple cheese pieces simply chop cheese into bite size pieces and fold into kale mix.
For halloween themed cheese pieces, use a cookie cutter to make your halloween cheese pieces. We used a skull cookie cutter to get our skull outlines.
When plating add your cheese halloween pieces to get maximum coverage of the fun cheesy bites!
