Smothered Meatloaf

Our Red Pepper & Meatball Soup makes for an easy & delicious twist on a Meatloaf recipe!

Cook Time: 55 minutes
Total Time: 1 hour, 5 minutes
Serves 4-6
1 lb italian sausage
1 lb ground beef
2 eggs
2 Tbs fresh parsley
1/2 onion, finely chopped
4 cloves garlic, finely chopped
2 Tbs worcestershire sauce
1 Tbs thyme
2 pouches Proper Good Red Pepper and Meatball Soup, blended
Salt and pepper, to taste
1. Preheat oven to 375 degrees. 
2. In large mixing bowl, combine all ingredients, saving one pouch of Proper Good Soup.
3. Form mixture into a loaf shape, in a large casserole dish. Pour over remaining pouch of Proper Good Red Pepper and Meatball Soup.
4. Bake for 55 minutes, or until the internal temperature is 160 degrees.
