We love this simple salad! You can make it in the time that it takes your Proper Good Soup to heat up! It's that quick!
Serves: 1 Salad
2 Handfuls - Fresh Arugula
2 Teaspoons - Olive Oil
2 Teaspoons - Freshly-Squeezed lemon juice
To Taste - Black Pepper
To Taste - Shaved Parmesan Pieces
Simply combine all of the ingredients in a bowl ensuring that the Arugula leaves are fully coated in the Olive Oil and Lemon Juice.
That's it! Serve with your favorite soup, personally we love it with our Butternut Squash Soup!
TOP TIP: To get large parmesan shavings, instead of using a grater, use a peeler on your parmesan cheese block.
