Ingredients:
1 cup Red Lentils
1 small Yellow Onion, finely diced
1 cup Proper Good Chicken Bone Broth (Mushroom Broth for Vegan Option)
1 15-oz can Fire-Roasted Diced Tomatoes
1/4 cup Fresh Parsley, chopped
1 tbsp. Olive Oil
Salt & Black Pepper, to taste
Fried or Poached Eggs, for serving (optional)
Sautéed Asparagus, for serving (optional)
Salsa, for serving (optional)
Sautéed Potatoes, for serving (optional)
Instructions:
1. In a medium saucepan, heat up the olive oil for 1 minute. Add in the diced onions to sauté for 2-3 minutes, or until soft and transparent.
2. Stir in the lentils, broth, and diced tomatoes. Bring to a boil, the cover and reduce heat to simmer for 8-10 minutes. Season with salt and pepper, to taste.
3. Top with your favorite savory add-ins, and fresh parsley. Enjoy warm!
