Ingredients
5 oz. Pound Cake, chopped into bite sized cubes, about 2 cups
2 cups Fresh Pineapple, cut into chunks
1/2 cup Maraschino Cherries, about half a jar, drained
1/4 cup Brown Sugar
3 tbsp. Butter, melted
3 tbsp. Granulated Sugar
3/4 tsp. Ground Cinnamon
5 Wood Skewers, soaked in water for 2-6 hours
Instructions
1. In a large bowl, mix together the brown sugar and cinnamon. Add in the pineapple chunks to toss until well coated. Set aside.
2. Dip the pound cake cubes into the melted butter, then roll in the granulated sugar to lightly coat.
3. If making ahead, place each ingredient layer (maraschino cherries, pineapple chunks, and pound cake cubes) in their own freezer-safe bag. Freeze until ready to make (either frozen or thawed).
4. When ready to grill, layer each wood skewer with the maraschino cherries, pineapple, and pound cake. Grill until slightly golden brown and crisp. Enjoy!
