Ingredients:
1/2 cup Light Brown Sugar, packed
2 ripe, medium-sized Bananas, mashed
1 cup Semi-sweet Chocolate Chips (use vegan-friendly for a vegan option!)
3 tbsp. Granulated Cane Sugar
3 tbsp. Olive Oil
1 large Egg, beaten (for a vegan option replace with 1/4 cup apple sauce)
2 tsp. Vanilla Extract
1 1/2 cups Quick Oats
1 1/4 cup Flour
1 tsp. Ground Cinnamon
1/2 tsp. Baking Soda
Pinch of Salt
Instructions:
1. Preheat oven to 350F. Line a 9x9" baking pan with parchment paper.
2. In a large bowl, whisk together the brown sugar, granulated sugar, and olive oil until creamy, about 1 minute. Stir in the remaining ingredients until very well combined.
3. Transfer the mixture to the prepared baking pan, press down to distribute evenly.
4. Bake for 25 minutes, or until just set. Allow the bars to cool in the pan for at least 20 more minutes before serving.
