A light and refreshing salad to pair with some Proper Good deliciousness.

1 cup tri color Israeli couscous
1 pouch Proper Good Bone Broth
1 15oz can chickpeas, drained and rinsed
1 cup grape tomatoes, cut in half
1/2 cup red onion, diced
1 bunch parsley, roughly chopped
1/2 cucumber, seeds removed and sliced thin
1 lemon juiced
Salt and pepper to taste
1. In a pot over medium high heat, bring couscous and Proper Good Bone Broth to a boil. Cover and simmer for 15 minutes. Remove from heat and cool completely.
2. In a large bowl, combine cool couscous with the remaining ingredients. Mix well.
