Ingredients
12 oz. Cooked Chicken, shredded, like rotisserie chicken or slow-cooked chicken breasts
1/2 Red Onion, finely chopped
1 cup Cherry Tomatoes, halved
1/2 English Cucumber, finely chopped
1 Red Bell Pepper, finely chopped
(optional) 2 Celery Stalks, finely chopped
1/2 cup Fresh Parsley, chopped
2 Scallions, chopped
1/3 cup Kalamata Olives, pitted, halved
(optional) Capers
(optional) Feta Cheese
For the dressing:
1/4 cup Extra Virgin Olive Oil
1 Lemon, juice and zest
1 tbsp. Dijon Mustard
Salt & Black Pepper, to taste
Instructions
1. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, and dijon mustard. Add salt and black pepper, to taste.
2. In a large bowl, toss together all remaining salad components until combined, drizzle on the salad dressing, then give it one more toss to evenly coat. Keep cold to enjoy up to 3-4 days!
