1/2 cup Red Lentils
1 1/2 cup Proper Good Chicken Bone Broth (Mushroom Broth for a Vegan Option)
2 tbsp. Olive Oil
1/2 Yellow Onion, minced
3 Garlic Cloves, minced
2 tbsp. Mild Whole Can Green Chiles
2 tbsp. Tomato Paste
1 tbsp. Worcestershire Sauce
1 tbsp. Dijon Mustard
1 tsp. Chili Powder
1/2 tsp. Salt
1. In a large pot, heat up the olive oil over medium high heat. Add in the minced onion and garlic to sauté for 2-3 minutes, or until fragrant and soft.
2. Add in the red lentils and broth, stir to combine. Bring to a boil, then reduce heat to simmer for 10-15 minutes.
3. Stir in the remaining ingredients, and simmer for another 3-4 minutes, or until sauce has thickened. Serve warm with toasted hamburger buns and your favorite toppings!
