Fig & Prosciutto Salad

Prep Time: 10 minutes
12 fresh figs, quartered (replace with dried figs if desired)
4 oz prosciutto, thinly sliced
1/4 cup blue cheese crumbles
8 oz fresh spinach
1 shallot, thinly sliced
1/3 cup olive oil
1 lemon, juiced
1 Tbs dijon mustard
salt and pepper, to taste
1. In large bowl, combine dressing ingredients and stir well.
2. Add all remaining ingredients and toss gently.
