Fig & Prosciutto Salad

Get figgy with it! This wholesome salad pairs perfectly with your favorite Proper Good Soup!

Prep Time: 10 minutes
Serves 4-6
Ingredients
12 fresh figs, quartered (replace with dried figs if desired)
4 oz prosciutto, thinly sliced
1/4 cup blue cheese crumbles
8 oz fresh spinach
1 shallot, thinly sliced
Dijon Dressing
1/3 cup olive oil
1 lemon, juiced
1 Tbs dijon mustard
salt and pepper, to taste
Method
1. In large bowl, combine dressing ingredients and stir well.
2. Add all remaining ingredients and toss gently. 
3. Serve with your favorite Proper Good Soup.
