The perfect springtime soup, featuring our delicious Chicken Bone Broth!

2 tbs oil
1/2 onion, thinly sliced
1 inch ginger, grated
8 oz mushrooms, thinly sliced
2 cloves garlic, minced
2 pouches Proper Good Bone Broth
2 cans unsweetened full-fat coconut milk
1 stalk lemongrass, thinly sliced
2 limes, juiced
2 Tbs soy sauce
1. In large pot over medium heat, warm oil and add onion, ginger, mushrooms and garlic. Saute for 5 minutes, until softened.
2. Add Proper Good Bone Broth, coconut milk and lemongrass. Simmer for 10 minutes.
3. Remove from heat and add lime juice and soy sauce.
