2-3 chicken breasts, sliced in thin strips
3 Tbs butter
8 oz baby bella mushrooms, sliced
3 cloves garlic, minced
1/2 onion, thinly sliced
Juice of 1 lemon
1/2 cup heavy cream
1 Tbs fresh parsley
Salt and pepper, to taste
1. In large saucepan over medium high heat, melt 2 Tbs butter. Cook chicken 2 minutes per side, until golden brown. Remove chicken from pan.
2 Add remaining butter to the pan. Saute mushrooms, garlic and onion for a few minutes until softened.
3. Pour in Proper Good Chicken and Mushroom Soup, lemon juice, heavy cream and bring to a boil. Reduce heat to low and simmer to thicken.
4. Return chicken to pan and cover in sauce. Add salt and pepper.
