Serves 4-6
Ingredients
2 cups cooked rice
1/4 cup shredded carrots
2 green onion, thinly sliced
1 Tbs fresh parsley, chopped
1 tsp coriander
Salt and pepper, to taste
1 Tbs oil, for frying
Method
1. Combine all ingredients in mixing bowl. Form patties, approximately 3-4 inches wide.
2. Warm pan on medium high heat with oil. Cook patties for 2-3 minutes per side, until golden brown.
3. Serve on lettuce cups or buns with condiments of your choice.
