Ingredients
- 1 pouch Proper Good Butternut Squash Soup
- 1/4 cup peanut butter
- 2 Tbs sesame oil
- 1 Tbs chili garlic sauce
- 1 package rice noodles
- 1 c bean sprouts
- 2 green onions, thinly sliced
- 1/2 cup chopped peanuts
- 1/2 lime, juiced
- Handful fresh cilantro, chopped
Method
- In a large saucepan over medium heat, add Proper Good Butternut Squash Soup, peanut butter, sesame oil and chili garlic sauce. Combine well and bring to a simmer.
- Meanwhile, in a large pot of boiling water, cook rice noodles according to directions on package.
- Add cooked rice noodles to the saucepan. Also add bean sprouts, green onions, chopped peanuts and lime juice.
- Mix well and top with fresh cilantro.
