Avocado and tomato salad recipe - Eat Proper Good

2 Salads

Ingredients

For Dressing
1/2 - Red Onion 
3 - Small Sweet Peppers
3/4 Cup - Water
1/3 Cup - White Wine Vinegar
For Salad
2 - Avocados
1 - Plum Tomato
To Taste - Salt
To Taste - Pepper
Method

For Dressing
Mix the Water and White Wine Vinegar. Finely chop the Onion and Sweet Red Peppers and add to the Water & Vinegar Mix.  Leave to soak.
For Salad
Cut Tomato and remove seeds, chop into big chunks. 
Peel Avocado, remove pit, and cut into big chunks.
Combine the Tomato and Avocado.
Add Salt and Pepper to taste.
Remove Onion and Red Peppers from their Water & Vinegar Bath and add to Avocado and Tomato.
This tangy healthy salad is ready to eat!  We enjoy pairing it with our Meatball Minestrone Soup!
 
TOP TIP
: If you love a tangy flavor reduce the water, the more vinegar heavy the mix for the Onion and Peppers the tangier the salad will be!
