This delightful, colorful salad is super easy to make! It's a great way to get your extra veggies and makes the perfect side to any Proper Good Soup or Pasta!
Zesty Side Salad - Eat Proper Good
Serves: 2
Prep Time: 10 minutes

Ingredients:
Salad:
  • 1 small zucchini, peeled into ribbons
  • 1 small summer squash, peeled into ribbons
  • 1 large carrot, peeled into ribbons
  • 1/4 cup red onion, thinly sliced
  • 3 sprigs fresh parsley, chopped
Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon maple syrup
  • Salt and pepper, to taste

Method:
  1. Peel the Veggies: Use a hand peeler to peel all the veggies into ribbons.
  2. Combine Ingredients: Add the veggie ribbons, red onion, and parsley into a bowl.
  3. Make the Dressing: Mix the olive oil, vinegar, maple syrup, salt, and pepper. Toss with the salad ingredients.
  4. Serve and Enjoy: Serve alongside your favorite Proper Good Soup or Pasta!
