Easy Peasy Spinach Puff Pastry

Spinach Puff Pastry paired with Proper Good soup

A super simple and delicious way to make a spinach puff pastry! The feta adds a lovely creaminess to complement the flavors, making it a perfect side dish to any Proper Good soup.

Serves: 4
Prep Time: 10 Minutes Bake Time: 15 Minutes Total Time: 25 Minutes

Ingredients
  • 1 sheet puff pastry, thawed
  • 1 (8 oz) bag frozen chopped spinach, thawed and drained
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 2 eggs
  • 1 tablespoon fresh or dried mint
  • Salt and pepper, to taste

Method
  1. Preheat the oven to 400°F.
  2. Place the thawed puff pastry on a lined baking sheet. Fold over the edges and press with a fork to hold the fold.
  3. In a bowl, combine spinach, cheeses, eggs, mint, salt, and pepper.
  4. Pour the spinach mixture in the center of the puff pastry sheet and spread it out evenly.
  5. Bake for 10-15 minutes, until golden brown.
