A super simple and delicious way to make a spinach puff pastry! The feta adds a lovely creaminess to complement the flavors, making it a perfect side dish to any Proper Good soup.

Ingredients
- 1 sheet puff pastry, thawed
- 1 (8 oz) bag frozen chopped spinach, thawed and drained
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup feta cheese, crumbled
- 2 eggs
- 1 tablespoon fresh or dried mint
- Salt and pepper, to taste
Method
- Preheat the oven to 400°F.
- Place the thawed puff pastry on a lined baking sheet. Fold over the edges and press with a fork to hold the fold.
- In a bowl, combine spinach, cheeses, eggs, mint, salt, and pepper.
- Pour the spinach mixture in the center of the puff pastry sheet and spread it out evenly.
- Bake for 10-15 minutes, until golden brown.
