Hearty Winter Salad - Eat Proper Good

Ingredients:
Salad:
  • 1 small sweet potato, diced
  • 1 cup brussel sprouts, sliced
  • 2 cups arugula
  • 1/4 cup red onions, thinly sliced
  • 1/4 cup chopped pecans
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons orange juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon cumin powder
  • 1 teaspoon thyme, dried
  • Salt and pepper, to taste

Method:
  1. Preheat the Oven:

    Set the oven to 400°F.
  2. Roast the Vegetables:

    Toss the diced sweet potato and sliced brussel sprouts in olive oil, salt, and pepper. Spread them in a baking pan and roast for 20-25 minutes, or until softened.
  3. Combine the Salad Ingredients:

    In a bowl, mix the roasted veggies, arugula, red onions, pecans, cranberries, and feta cheese.
  4. Prepare the Dressing:

    Whisk together the olive oil, orange juice, red wine vinegar, dijon mustard, cumin powder, thyme, salt, and pepper.
  5. Toss and Serve:

    Add the dressing to the salad bowl, toss well, and enjoy with your favorite
