Salad:
- 1 small sweet potato, diced
- 1 cup brussel sprouts, sliced
- 2 cups arugula
- 1/4 cup red onions, thinly sliced
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled
Dressing:
- 1/4 cup olive oil
- 2 tablespoons orange juice
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon cumin powder
- 1 teaspoon thyme, dried
- Salt and pepper, to taste
Method:
- Preheat the Oven:
Set the oven to 400°F. - Roast the Vegetables:
Toss the diced sweet potato and sliced brussel sprouts in olive oil, salt, and pepper. Spread them in a baking pan and roast for 20-25 minutes, or until softened. - Combine the Salad Ingredients:
In a bowl, mix the roasted veggies, arugula, red onions, pecans, cranberries, and feta cheese. - Prepare the Dressing:
Whisk together the olive oil, orange juice, red wine vinegar, dijon mustard, cumin powder, thyme, salt, and pepper. - Toss and Serve:
