9 biscuits

Ingredients
  • 1 stick (8 tablespoons) unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 4 teaspoons granulated sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 1/2 cups cold buttermilk

Method
  1. Preheat
    the oven to 400°F and place a rack in the middle.
  2. Melt butter
    in a saucepan over low heat. Pour into an 8x8-inch baking dish, swirling to coat the sides.
  3. Mix dry ingredients:
    In a large bowl, whisk together flour, baking powder, sugar, salt, and baking soda.
  4. Add buttermilk
    and stir with a rubber spatula until a sticky dough forms and no dry flour remains.
  5. Transfer dough
    into the baking pan, using damp hands to press evenly until it touches all sides. Cut the dough in a 3x3 grid to make 9 squares (they’ll be touching).
  6. Bake
    for 25-27 minutes, until golden-brown and puffed. Immediately re-cut along scores to separate. Let cool for at least 15 minutes before serving.
