Valentine's Chicken Salad

Moreish Chicken Salad, made with bone broth!

Serves 4
1 pouch Proper Good Chicken Bone Broth
2 chicken breasts
3 stalks celery, finely chopped
2 green onion, finely chopped
1/2 c mayonnaise (keto-friendly)
salt and pepper to taste
1. In a saucepan over medium heat, add Proper Good Chicken Bone Broth and chicken breasts. Bring to a boil and cook for 10-12 minutes, or until chicken is cooked.
2. Cool chicken and cut in cubes. In a large bowl, mix chicken, celery, green onion, mayonnaise, salt and pepper.
3. Serve on salad or in lettuce cups for a quick protein rich meal.
